Fresh plum cake recipe and books
So you would like to know how to make Fresh plum cake recipe! It is not hard, follow the steps below and enjoy your own creation. Check our books section as well!

350g self raising flour
1/2 teaspoon salt
2 teaspoons cinnamon
175g hard magprine
75g + 2 tablespoons soft brown sugr
75g sultanas
450g fresh plums
6 tablespoons golden syrup
3 eggs
Pre heat oven to gas mark 4 350F180C.
You will need a 20cm round cake tin grease and lined.
First sift the flour salt and 1 teaspoon of cinnamon into a large mixing bowl. Add the margarine and cut it into small pieces with a sharp knife.Then discard the knife and rub it in with your fingertips until you get a mixture that resembles breadcrumbs.
Now stir in the 75g brown sugar and sultanas.
Next cut the plums into halves discard the stones and then reserve 10 complete halves and chop the rest finely.
After that put the golden syrup and eggs into a bowl and beat them gently. Now add this mixture to the dry ingredients and then fold in the chopped plums.
Next spoon the mixture into the cake tin and level it with the back of a spoon then arrange the sliced plum halves on the top.
Finally mix the remaining 2 tablespoons of brown sugar and 1 teaspoon of cinnamon and sprinkle over the top of the cake.
Bake in the centre of the oven for approx. 2 hours.
To test if it is cooked press the centre lightly with your fingers if it is cooked it will not leave an impression.
Leave the cake to cool completely in the tin before turning it out.
Then wrap it up in foil and leave it for 2 days to mature.
It will keep for at least a week and will taste better every day
